Bone Broth-Based Vegetable Quinoa Stew Recipe

Ingredients:

  • 4 cups of Revitalize bone broth (beef, chicken, pork or veg)
  • 1 cup quinoa, rinsed and drained
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 2 cups spinach or kale, roughly chopped
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Cook the Quinoa: In a medium saucepan, cook the quinoa according to package instructions, using water or additional bone broth for extra flavor. Set aside once cooked.
  2. Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onions are translucent. Add the carrots, celery, and red bell pepper, cooking until they start to soften, about 5 minutes.
  3. Add Bone Broth and Simmer: Pour the bone broth into the pot with the vegetables. Add the diced tomatoes with their juice, oregano, basil, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes.
  4. Add Zucchini and Greens: Add the chopped zucchini and the greens (spinach or kale). Simmer for another 5-10 minutes, or until the vegetables are tender.
  5. Combine with Quinoa: Stir in the cooked quinoa and heat through.
  6. Serve: Adjust the seasonings as needed. Serve the stew in bowls, garnished with fresh parsley.
