Revitalize Bone Broth Noodle Soup Recipe

Ingredients:

  • 4 cups of Revitalize's Bone Broth (beef, chicken, pork or veg)
  • 200 grams of your favourite noodles (ramen, udon, rice noodles, etc.)
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 small onion, thinly sliced
  • 1 medium carrot, julienned
  • 1 cup of sliced mushrooms (shiitake or button mushrooms work well)
  • 1 cup of leafy greens (spinach, bok choy, or kale)
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Optional toppings: sliced cooked chicken, beef, boiled eggs, sesame seeds, chili flakes, or fresh herbs

Instructions:

  1. Prepare the Noodles: Cook the noodles according to the package instructions. Once cooked, drain and set aside. If you’re using rice noodles, soak them in warm water until soft, then drain.

  2. Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the minced garlic and sliced onion, sautéing until the onion is translucent. Add the julienned carrot and sliced mushrooms, cooking for a few more minutes until they start to soften.

  3. Simmer with Bone Broth: Pour the bone broth into the pot. Bring it to a simmer and let it cook for about 10-15 minutes, allowing the flavours to meld together. Season with salt and pepper to taste.

  4. Add Greens and Noodles: Add the leafy greens to the pot and cook until they are just wilted. Then, add the cooked noodles to the soup, stirring gently to combine.

  5. Serve: Divide the noodle soup into bowls. If desired, top with your choice of protein (like sliced chicken or beef), boiled eggs, and additional toppings like sesame seeds, chili flakes, or fresh herbs. Garnish with chopped green onions.

  • Personalize Your Soup: Feel free to add or substitute vegetables based on your preference or what you have on hand. Bell peppers, corn, and peas are also great additions.
