Bone Broth Recipe

Ingredients:

  • 2-3 pounds of mixed bones (beef, chicken, or turkey bones are great options; including a mix of marrow bones and joints is ideal)
  • 2 tablespoons of apple cider vinegar (helps extract nutrients from the bones)
  • 1 large onion, quartered
  • 2-3 carrots, roughly chopped
  • 3-4 celery stalks, roughly chopped
  • 4-5 cloves of garlic, peeled and smashed
  • A few sprigs of fresh herbs like thyme or parsley (optional)
  • 1 bay leaf
  • Salt and pepper to taste
  • Enough water to cover the bones (about 12-16 cups)

Instructions:

  1. Prep the Bones: If using raw bones, especially beef, it’s a good idea to roast them first. Preheat your oven to 400°F (200°C), place the bones on a baking sheet, and roast for 30 minutes. This step enhances the flavor of the broth.

  2. Combine Ingredients: Place the roasted bones in a large stockpot. Add apple cider vinegar, onion, carrots, celery, garlic, herbs (if using), bay leaf, salt, and pepper.

  3. Add Water and Simmer: Cover the bones and ingredients with water. Bring the mixture to a boil over high heat. Once boiling, reduce the heat to a low simmer. For beef bones, simmer for 12-24 hours; for chicken or turkey bones, 8-12 hours is sufficient. The long simmering time helps extract nutrients and flavours.

  4. Skim the Fat: Throughout the simmering process, skim off any foam or excess fat that rises to the surface.

  5. Strain the Broth: After simmering, remove from heat and strain the broth using a fine-mesh sieve. Discard the solids.

  6. Cool and Store: Allow the broth to cool. You can then store it in the fridge for up to 5 days or freeze it for later use. When cooled, the broth may gelatinize, which is a sign of a well-made bone broth.

  7. Serve or Use: Heat the broth to drink it on its own, or use it as a base for soups, stews, or other recipes.

Notes:

  • Quality of Bones: The quality of your bone broth heavily depends on the quality of the bones you use. Organic, grass-fed bones are preferred for the most nutritious and flavourful broth.
  • Acid is Important: Don't skip the apple cider vinegar, as it's crucial for drawing out the minerals from the bones.
  • Slow Cooker Option: You can also make bone broth in a slow cooker. Just place all the ingredients in the slow cooker and set it to low for the same amount of time.
